Blueberry almond pancakes: Sweet and tart with almond extract, perfect for breakfast or brunch.
Ingredients:
  • 5 tablespoons butter, divided
  • 1.25 cups all-purpose flour
  • 2 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup plain yogurt
  • 2 eggs
  • 1.5 teaspoons almond extract
  • 0.25 cup water, or as needed
  • 1 cup fresh blueberries
Instructions:
  • Melt 3 tablespoons of butter in a microwave-safe bowl for 20 to 30 seconds, until smooth and creamy.
  • Combine flour, sugar, baking powder, and salt in a bowl and whisk together.
  • In a bowl, whisk together yogurt and eggs. Stir in melted butter and almond extract until smooth. Gently mix in the flour until fully incorporated. Gradually add water, 1 tablespoon at a time, until the batter is pourable.
  • In a large skillet or griddle over medium-low heat, melt the remaining butter. Pour 1/4 cup of batter onto the skillet and evenly place 6 to 10 blueberries on top. Cook until the batter starts to bubble, which should take about 1 to 2 minutes. Flip and cook until the bottom turns lightly brown, which takes approximately 30 seconds. Repeat this process with the remaining batter and blueberries.
