Indulge in a delightful blueberry lemon loaf with your tea.
Ingredients:
  • 170g butter, softened
  • 180g caster sugar
  • 1 lemon, rind finely grated
  • 3 eggs
  • 120g plain flour
  • 100g almond meal
  • 4.00 gm baking powder
  • 41.20 gm milk
  • 150g fresh blueberries
  • 125g icing sugar
  • 31.50 gm fresh lemon juice
Instructions:
  • Preheat the oven to 160°C and line a 10cm x 20cm loaf pan with nonstick baking paper. Beat the butter, caster sugar, and lemon rind with an electric beater until pale and creamy.
  • Gradually beat in the eggs, then fold in the flour, almond meal, baking powder, and milk.
  • Gently mix in the blueberries, then spread the batter in the pan evenly. Bake for 1 hour and 10 minutes or until a skewer comes out clean. Let it rest for 5 minutes before transferring to a wire rack to cool.
  • Mix the icing sugar and lemon juice until creamy. Drizzle over the cake and allow it to firm up.
