Indulge in a zesty Glazed Lemon-Blueberry Loaf with ultra-moist crumb, thanks to sour cream in the batter. Elevate the flavor with a lemon glaze and fresh zest for a citrus burst.
Ingredients:
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla
  • 1 cup sour cream or plain yogurt
  • Grated peel and juice of 1 lemon
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 teaspoons whipping cream or milk
  • 1 teaspoon lemon extract
Instructions:
  • Preheat your oven to 350°F and generously grease the bottom of a 9x5-inch loaf pan with shortening or cooking spray.
  • In a medium bowl, using an electric mixer, combine smooth butter and granulated sugar until creamy. Mix in eggs, vanilla, sour cream, lemon peel, and juice. Fold in flour, baking soda, and baking powder.
  • Gently incorporate 3/4 cup blueberries into the batter, then transfer it to the pan. Lastly, sprinkle the remaining 1/4 cup of blueberries on top.
  • Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan onto a cooling rack. Cool completely.
  • Combine the glaze ingredients in a small bowl until perfectly smooth. Drizzle the glaze over the loaf and allow it to set before slicing.
