Delicious lemon blueberry scones with a sweet lemon glaze, bursting with fresh blueberries and citrus flavor.
Ingredients:
  • 2 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 2 teaspoons baking powder
  • 1 lemon, zested
  • 0.25 teaspoon baking soda
  • 0.5 cup cold butter, cubed
  • 1 cup fresh blueberries
  • 0.5 cup heavy cream
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons heavy cream
  • 0.25 cup powdered sugar
  • 1.5 teaspoons fresh lemon juice
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare 2 baking sheets with parchment paper.
  • In a food processor, blend flour, sugar, baking powder, lemon zest, salt, and baking soda until combined. Add butter and pulse until mixture resembles coarse crumbs. Transfer mixture to a large bowl and gently fold in blueberries until well coated.
  • Combine 1/2 cup heavy cream, egg, and lemon juice in a small bowl, whisk until smooth, then add to flour mixture and mix until slightly moistened.
  • Place dough on a generously floured surface. Shape dough into a circle using floured hands, gently knead to combine any dry ingredients. Flatten into a 9-inch disc, then cut into 8 triangles. Transfer scones to baking sheets using a bench scraper (4 per sheet), and brush with 2 tablespoons of heavy cream.
  • Bake in the preheated oven for 20-23 minutes or until light brown. Allow it to cool completely for about 30 minutes before serving.
  • Prepare the glaze by combining powdered sugar and lemon juice in a small bowl. Transfer the mixture into a small resealable plastic bag, cut a small hole in one corner of the bag with scissors, and drizzle the cooled scones with the glaze.
