Delicious blueberry scones with tangy lemon glaze, ready in just 45 minutes.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar
  • 1/2 cup butter, softened
  • 2 cups light sour cream
  • 1/4 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 3 lemons
  • 2 eggs
  • 1 cup granulated sugar
  • 4 tablespoons butter
Instructions:
  • - Preheat the oven to 350°F. - Combine all dry ingredients. - Incorporate softened butter. - Gently mix in sour cream and vanilla. - Fold in blueberries delicately. - Avoid overmixing the dough.
  • Drop 1/3 cup portions of dough onto two lightly greased baking sheets. Bake until golden brown, about 30 minutes. Let cool for 5 minutes.
  • Zest and juice all three lemons. In a medium saucepan over medium heat, combine lemon zest, lemon juice, eggs, and sugar. Whisk continuously without boiling. Once hot, reduce heat to low and gradually whisk in butter. Simmer on low for 6 minutes until the glaze thickens. Cool before using.
  • Drizzle warm scones with zesty lemon glaze and refrigerate any extra for later.
