Enhance scones with fresh blueberries for extra deliciousness.
Ingredients:
  • 250g strong (baker's) plain flour
  • 1.25 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • 50g unsalted butter, chilled, diced, plus extra to serve
  • 50g caster sugar
  • 125g blueberry
  • 175ml buttermilk
Instructions:
  • Preheat the oven to 200°C and generously dust a large baking tray with flour.
  • Combine the flour, bicarbonate of soda, cinnamon, and 1/2 teaspoon of salt in a large bowl, then mix thoroughly. Incorporate the butter by rubbing it into the flour with your fingertips until you have a mixture resembling fine crumbs. Next, add the sugar, blueberries, and buttermilk, and stir until a dough forms.
  • Dust your hands with flour and shape the dough into a 20cm round. Use a knife to mark 8 wedges in the dough. Bake for 20-25 minutes until light golden. Once cooled, gently break the scones into 8 pieces, then split each in half and spread with butter.
