Blueberry scones bursting with sweet, tangy flavor - perfect for a quick, delicious breakfast on-the-go.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup white sugar, or more as needed
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 stick frozen unsalted butter
  • 0.5 cup sour cream
  • 1 large egg
  • 2 cups frozen blueberries
Instructions:
  • Preheat the oven to 375°F (190°C) for perfect baking results.
  • Combine flour, 1/2 cup sugar, baking powder, baking soda, and salt in a food processor. Pulse until well mixed. Add frozen butter and process until mixture resembles fine crumbs, with no large butter chunks remaining.
  • Combine sour cream and egg in a bowl, then mix with an electric stand mixer or by hand until mixture forms crumbs that pull away from the bowl's sides. Stir in blueberries.
  • Divide the dough in half and place one portion on a floured surface. Use your hands to shape it into a 1/2-inch thick, 8-inch diameter disc, pressing in any blueberries that may fall out. Cut it into 8 triangles and place them on a baking sheet. Repeat the process with the second half of dough. Finally, sprinkle a pinch of sugar on top of each scone.
  • Bake until the tops are lightly golden, about 17 to 22 minutes in the preheated oven.
