Fresh Lemon-Blueberry Scones

Effortlessly bake delicious and soft scones using a convenient baking pan.
Ingredients:
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon grated lemon peel
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup firm butter or margarine
  • 1 package (3 oz) cream cheese, softened
  • 1 egg
  • 1/3 cup milk
  • 3/4 cup fresh blueberries
  • Lemon juice
  • Sugar
Instructions:
  • Preheat the oven to 400°F. Combine flour, 1/4 cup sugar, lemon peel, baking powder, and salt in a large bowl. Use a pastry blender or 2 knives to cut in the butter until mixture resembles fine crumbs.
  • Combine cream cheese and egg in a small bowl until smooth. Gradually mix in milk and blueberries. Stir mixture into flour until dough forms a ball.
  • Divide 1/3 cup of dough into each wedge of an ungreased scone pan. Brush the dough with fresh lemon juice and sprinkle with sugar for a tangy and sweet finishing touch.
  • Bake for 20-22 minutes until golden brown, then promptly transfer to a cooling rack. Serve warm.
