Blueberry compote with yoghurt

Blueberry compote keeps fresh in fridge for 5 days.
Ingredients:
  • 40.00 gm caster sugar
  • 300g frozen blueberries
  • 1 tsp finely grated orange rind
  • 2.65 gm lemon juice
  • vanilla yoghurt, to serve
Instructions:
  • In a saucepan, combine sugar, blueberries, orange rind, and lemon juice. Cook and stir for 8 minutes until it becomes syrupy and slightly reduced. Take it off the heat and refrigerate until cold.
  • Divide the creamy yogurt into eight small bowls or glasses and generously spoon on the refreshing chilled blueberry compote before serving.
