Indulgent baked French toast topped with sweet blueberry compote.
Ingredients:
  • 16 slices firm white bread
  • 1 (8 ounce) package Neufchatel cheese, softened
  • 1 cup blueberries
  • 3 cups milk
  • 3 eggs
  • 0.33333334326744 cup maple syrup
  • 0.25 cup white sugar
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 cup white sugar
  • 1 tablespoon butter
Instructions:
  • Prepare a 9x13 inch baking dish by generously greasing it with butter. Cut 10 slices of bread into 3/4 inch cubes. Spread Neufchatel cheese on one side of the remaining 6 slices of bread. Arrange the bread slices in the baking dish with the cheese side facing up. Sprinkle 1 cup of blueberries over the bread slices, then top with the bread cubes.
  • In a bowl, combine milk, eggs, maple syrup, vanilla extract, and 1/4 cup of sugar. Pour mixture over the bread, cover, and refrigerate overnight.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine nutmeg and 1/4 cup of sugar in a small bowl, then sprinkle over bread mixture. Cover with foil and bake in preheated oven until a knife inserted in the center comes out clean, about 20-30 minutes. Let cool in the pan for 5 minutes before serving.
  • In a saucepan, combine cornstarch, water, and the remaining 1 cup of sugar over medium heat. Bring to a gentle simmer and cook until thickened, about 3 minutes. Remove from heat and mix in butter and the remaining 1 cup of blueberries. Serve with the french toast.
