Delicious rustic cornmeal cookies with dried blueberries, cornmeal, and corn flour - simple and satisfying!
Ingredients:
  • nonstick cooking spray
  • 1 cup white masa harina (corn flour)
  • 0.5 cup cornmeal
  • 1 teaspoon cream of tartar
  • 1 cup brown sugar
  • 0.5 cup unsalted butter, at room temperature
  • 2 tablespoons milk
  • 1 cup dried blueberries
Instructions:
  • Preheat the oven to 350°F (175°C) and grease 2 baking sheets with nonstick cooking spray.
  • Combine corn flour, flour, cornmeal, cream of tartar, and salt in a large bowl, sifting them together gently before setting aside.
  • In a separate bowl, use an electric mixer to cream together brown sugar and butter for 2 to 3 minutes until creamy. Incorporate the egg thoroughly. Mix in the dry ingredients until just combined, then gently fold in the milk and blueberries.
  • Scoop dough with a medium cookie scoop, form into balls, coat in white sugar, then space 2 inches apart on prepared baking sheets. Flatten with a glass bottom.
  • Bake until the bottoms are golden brown, about 20-25 minutes in the preheated oven.
