Delicious blueberry cornmeal muffins - moist, rich, and heavenly! Can't wait to share the recipe with you!
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 cup cornmeal
  • 0.5 cup butter, melted
  • 1 cup frozen blueberries
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then prep your muffin cups by greasing or lining them with paper liners.
  • In a large bowl, combine flour, cornmeal, brown sugar, salt, and baking powder. Gently coat blueberries in the mixture. In a separate small bowl, whisk together milk, butter, and egg. Fold the wet ingredients into the dry mixture until just combined. Divide batter into muffin tins.
  • Bake in a hot oven for 20 minutes, then allow the muffins to cool in the pan for 10 minutes before removing.
