Zesty lemon and juicy blueberries elevate this easy loaf cake to a whole new level.
Ingredients:
  • 0.33333334326744 cup butter, melted
  • 1 cup white sugar
  • 1 lemon, juiced
  • 2 eggs
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 2 tablespoons lemon zest
  • 1 cup fresh blueberries
  • 2 tablespoons lemon juice
  • 0.25 cup white sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease and flour an 8x4-inch loaf pan.
  • Combine the flour, baking powder, and salt in a medium bowl and set it aside.
  • Cream together butter and 1 cup of sugar in a large bowl until light and fluffy. Beat in the eggs one at a time, then mix in the juice of 1 lemon. Alternate adding the flour mixture and milk until combined. Fold in lemon zest and blueberries before pouring the batter into the prepared pan.
  • Bake until a toothpick inserted in the center comes out clean, for 60 to 70 minutes.
  • Prepare the glaze by mixing 1/4 cup of sugar with 2 tablespoons of fresh lemon juice. Generously drizzle the warm glaze over the bread.
