Easily can tasty blueberries for homemade pies, just like store-bought but more affordable.
Ingredients:
  • 7 quarts fresh blueberries
  • 4.5 cups white sugar
  • 1 tablespoon salt
  • 10 cups water, divided
  • 1 cup cornstarch
Instructions:
  • In a large non-reactive pot, combine blueberries, sugar, lemon juice, salt, and 8 cups of water. Bring the mixture to a boil over high heat. In a separate bowl, dissolve cornstarch in 2 cups of water, then stir into the boiling blueberries until thickened. Cook and stir for an additional 2 minutes.
  • Fill 7 sterilized quart jars with lids and rings. Process in a pressure canner for 5 minutes at 5 pounds of pressure. Let jars cool on a cloth-covered surface. Check each lid to ensure a tight seal. Store sealed jars for up to a year.
