Blueberry pumpkin muffins with warm spices and hearty oats, merging summer and fall in each bite.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.75 cup quick cooking oats
  • 0.66666668653488 cup white sugar
  • 2 teaspoons baking powder
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 cup canned pumpkin
  • 0.5 cup milk
  • 1 egg
  • 0.25 cup butter, melted
  • 0.75 cup fresh blueberries or frozen blueberries, thawed
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare your muffin pan by greasing and flouring it or using paper liners.
  • In a mixing bowl, combine flour, oats, sugar, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, mix pumpkin, milk, egg, and butter. Gently fold in the dry ingredients until just moistened. Finally, add blueberries and fill muffin cups to the top with batter.
  • Bake in a hot oven until the tops bounce back when lightly touched, approximately 20 minutes.
