Irresistible blueberry sauce: fresh/frozen blueberries cooked with sugar and cornstarch, perfect for pancakes and beyond!
Ingredients:
  • 2 cups fresh or frozen blueberries
  • 0.25 cup water
  • 1 cup orange juice
  • 0.75 cup white sugar
  • 0.25 cup cold water
  • 3 tablespoons cornstarch
  • 0.125 teaspoon ground cinnamon
Instructions:
  • In a saucepan over medium heat, mix together blueberries, 1/4 cup of water, orange juice, and sugar, stirring gently until it reaches a boil.
  • Blend cornstarch and 1/4 cup of cold water in a cup; combine gently with blueberries to avoid mashing them. Cook over low heat until the sauce thickens enough to coat the back of a spoon, about 3 to 4 minutes. Take it off the heat and stir in almond extract and cinnamon. Adjust the thickness by adding more water if needed.
