Blueberry Streusel Coffee Cake

Blueberry walnut cake layers.
Ingredients:
  • 1 tablespoon melted butter, or as needed
  • 1 tablespoon all-purpose flour, or as needed
  • 2.75 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 0.75 cup unsalted butter
  • 3 room-temperature eggs
  • 2 teaspoons vanilla extract
  • 1 pint sour cream
  • 2 cups blueberries
  • 0.75 cup brown sugar
  • 0.75 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Grease your tube pan with 1 tablespoon each of melted butter and flour for a perfect non-stick surface.
  • In a bowl, mix together 2 3/4 cups of flour, along with baking powder, baking soda, and salt.
  • In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. The mixture should become noticeably lighter in color. Add eggs one at a time, making sure each egg is well blended before adding the next. Beat in the vanilla with the last egg. Alternately add the flour mixture and sour cream into the bowl with the butter mixture, mixing until just combined into a batter.
  • Combine fresh blueberries with rich brown sugar, crunchy walnuts, and fragrant cinnamon for a delightful burst of flavors and textures.
  • In the prepared pan, layer one-third of the batter and one-third of the blueberry mixture. Then add half of the remaining batter followed by one-third of the remaining blueberry mixture. Finish with the rest of the batter and blueberry mixture.
  • Bake until golden brown and the tops spring back when gently touched, for 60 to 65 minutes in the preheated oven.
