Blueberry coffee cake with pecan streusel topping.
Ingredients:
  • 0.25 cup butter
  • 0.75 cup white sugar
  • 1 egg
  • 0.5 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 2 cups blueberries
  • 0.5 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 cup chopped pecans
  • 3 tablespoons butter
Instructions:
  • Preheat oven to 375 degrees F (190 degrees C), then prepare a 9-inch springform pan by greasing and flouring it. Next, sift together the flour, baking powder, and salt, then set aside.
  • Combine butter and sugar in a large bowl until light and fluffy. Mix in the egg. Add the flour mixture and milk alternatively, mixing until just combined. Gently fold in the blueberries. Pour the batter into a prepared pan. In a small bowl, combine brown sugar, 3 tablespoons flour, cinnamon, and chopped pecans. Cut in butter until crumbly then sprinkle over the batter.
  • Bake in the preheated oven for 40-45 minutes until a toothpick comes out clean. Cool before serving.
