Classic blueberry cake recipe versatile as coffee cake or muffins.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 cup vegetable oil
  • 0.75 cup white sugar
  • 1 egg
  • 0.5 cup milk
  • 1 cup blueberries
  • 0.33300000429153 cup all-purpose flour
  • 0.5 cup white sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup butter, softened
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch pan. Combine flour, baking powder, and salt, sifting them together. Keep it aside.
  • Combine oil, sugar, and egg in a large bowl. Add flour mixture and milk alternately, mixing until just incorporated. Gently fold in blueberries. Spread batter in pan and top with streusel.
  • To make the topping more delicious, mix 1/3 cup of flour, a dash of cinnamon, and 1/2 cup of sugar in a bowl. Incorporate the butter until the mixture looks like coarse crumbs.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 45 minutes. Let it cool.
