Delicious blueberry muffins with a simple streusel topping.
Ingredients:
  • 0.5 cup butter, softened
  • 0.75 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 1.5 cups blueberries
  • 2 tablespoons brown sugar
  • 0.25 teaspoon ground cinnamon
  • 2 tablespoons butter, chilled
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare muffin cups by greasing them or lining with paper liners.
  • Cream the butter and sugar in a large bowl until light and fluffy. Add the eggs one at a time, beating well after each addition, then mix in the vanilla. In another bowl, combine 2 cups flour, baking powder, and salt.
  • Combine the flour mixture with the egg mixture and milk in alternate additions, then gently fold in blueberries. Fill muffin cups with the batter. In a small bowl, combine 2 tablespoons of flour, brown sugar, and cinnamon. Cut in butter until it becomes a crumbly mixture. Sprinkle this topping over the unbaked muffins.
  • Bake in a warmed oven for 25-30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
