Blueberry Streusel Muffins (lighter recipe)

Healthy apple streusel muffins with reduced oil thanks to applesauce. Perfect for a delicious breakfast!
Ingredients:
  • 1/4 cup Gold Medal™ all-purpose or whole wheat flour
  • 2 tablespoons packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons firm margarine
  • 1 cup fat-free (skim) milk
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla
  • 1 egg
  • 2 cups Gold Medal™ all-purpose or whole wheat flour
  • 1/3 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or canned (drained) blueberries
Instructions:
  • Preheat oven to 400°F. Grease the bottoms of 12 regular-size muffin cups or line with paper baking cups. In a medium bowl, combine 1/4 cup flour, brown sugar, and cinnamon. Use a pastry blender or two knives to cut in margarine until crumbly.
  • In a large bowl, vigorously mix together milk, applesauce, oil, vanilla, and egg until fully combined. Add 2 cups of flour, granulated sugar, baking powder, and salt together in one go, stirring just until the flour is moistened (the batter will be lumpy). Delicately fold in the blueberries. Distribute the batter evenly into the muffin cups and top each one with roughly 2 teaspoons of streusel topping.
  • Bake for 20-25 minutes until beautifully golden. Then transfer to a cooling rack. Enjoy warm or at room temperature.
