Blueberry Streusel Muffins

Skip the bakery and make delicious homemade breakfast treats at home!
Ingredients:
  • 1/4 cup Gold Medal™ all-purpose or whole wheat flour
  • 2 tablespoons packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons firm butter or margarine
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla
  • 2 cups Gold Medal™ all-purpose or whole wheat flour
  • 1/3 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or canned (drained) blueberries
Instructions:
  • Preheat the oven to 400°F. Grease only the bottoms of 12 regular-size muffin cups or line them with paper baking cups. In a medium bowl, combine 1/4 cup flour, brown sugar, and cinnamon. Use a pastry blender or 2 table knives to cut in the butter until the mixture is crumbly.
  • Combine milk, oil, vanilla, and egg in a large bowl until fully mixed. Add 2 cups of flour, granulated sugar, baking powder, and salt all at once. Mix until flour is moistened, leaving the batter lumpy. Carefully fold in blueberries. Distribute batter evenly into muffin cups and top each with 2 teaspoons of streusel topping.
  • Bake for 20-25 minutes or until beautifully golden. Then, promptly transfer to a cooling rack. Enjoy warm or at room temperature.
