Blueberry lemon filling over buttery shortbread crust.
Ingredients:
  • 1 cup butter, at room temperature
  • 0.5 cup powdered sugar
  • 3 cups blueberries
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon extract
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine the flour, butter, and powdered sugar until a dough comes together, then firmly press the dough into a 9-inch tart pan with a removable bottom.
  • Bake until golden brown in the preheated oven for around 20 minutes, then allow it to cool slightly.
  • Toss blueberries with cornstarch, then combine in a saucepan over low heat with sugar and lemon extract. Simmer gently, stirring occasionally until the sugar dissolves and the filling thickens, about 5 to 8 minutes.
  • Cover the chilled crust with the vibrant blueberry filling and allow it to set before cutting into delectable slices.
