Blueberry cobbler: Fresh blueberries layered in buttery lemon cake mix, baked in individual ramekins.
Ingredients:
  • cooking spray
  • 1 pint fresh blueberries
  • 2 teaspoons white sugar
  • 0.5 teaspoon cornstarch
  • 0.5 teaspoon water
  • 4 tablespoons butter, cut into 4 pieces
  • 2 cups lemon cake mix
Instructions:
  • - Preheat your oven to a toasty 350 degrees F (175 degrees C) and coat 4 charming ramekins with cooking spray.
  • Combine blueberries, sugar, water, and cornstarch in a bowl. Gently stir until well mixed, 30 seconds to 1 minute.
  • Evenly distribute the blueberries among the ramekins, filling them three-quarters full.
  • Melt butter in a large microwave-safe bowl for about 1 minute.
  • Combine lemon cake mix with butter until just combined; mixture may be slightly dry and lumpy. Divide about 1/2 cup of the mixture into each ramekin and lightly spray the tops with cooking spray.
  • Bake in the oven until tops are lightly golden, for about 25 to 30 minutes. Serve while warm.
