Lemon Blueberry Cake-Mix Baked Oatmeal

Yellow cake mix and oats combine with lemon, blueberries, and citrus glaze for a unique, brunch-worthy treat.
Ingredients:
  • 4 cups milk
  • 2 cups quick-cooking oats
  • 1/2 cup butter, cut into tablespoons
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 3 eggs
  • 1 tablespoon finely grated lemon zest
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh blueberries
  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons fresh lemon juice
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch baking dish with cooking spray.
  • In a 4-quart saucepan, gently heat milk until just boiling over medium-high heat. Lower heat to medium, stir in oats, and cook for 1 minute. Remove from heat, add butter, and stir until melted. Mix in cake mix, eggs, lemon zest, vanilla, and salt until well combined. Gently fold in 1 cup of blueberries. Transfer mixture into a pan and sprinkle remaining 1/2 cup of blueberries on top.
  • Bake for 38 to 43 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 30 minutes before adding the glaze.
  • Mix powdered sugar and 1 tablespoon lemon juice in a small bowl until smooth. If needed, add more lemon juice, 1 teaspoon at a time, to reach desired consistency. Drizzle frosting over cake and serve with a large spoon.
