Blueberry-Lemon Cheesecake Toaster Strudel™ Bars

Indulgent dessert with layered pastries, rich cheesecake, and fresh berries.
Ingredients:
  • 2 packages (11.7 oz) frozen Pillsbury™ Blueberry Toaster Strudel™ (6 Count)*
  • 2 packages (8 oz each) cream cheese, softened
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • Grated peel and juice of 1 small lemon
  • 2 cups fresh blueberries
  • Powdered sugar, for sprinkling
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch (3-quart) baking dish with cooking spray.
  • Follow the toasting instructions on the pastry box, setting aside the icing packets. Arrange the toasted pastries flat in a baking dish.
  • In a large bowl, whisk together cream cheese, granulated sugar, vanilla, eggs, lemon peel, and lemon juice until creamy. Pour the mixture over toaster pastries and spread evenly with a rubber spatula. Top with fresh blueberries before baking.
  • Bake for 25-30 minutes until the center is just starting to set. Allow to cool for 10 minutes, then cover and refrigerate for 2 hours.
  • When it's time to enjoy, generously drizzle the reserved icing over the bars and dust them with powdered sugar before cutting into 6 rows by 3 rows.
