Blueberry-Lemon Cheesecake Bars

Luscious lemon blueberry cheesecake bars on a crunchy Golden Grahams™ crust - absolute perfection!
Ingredients:
  • 3 3/4 cups Golden Grahams™ cereal
  • 3 tablespoons packed brown sugar
  • 1/2 cup butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tablespoon finely grated lemon peel
  • 1/4 cup fresh lemon juice
  • 1 cup fresh blueberries
  • Powdered sugar, if desired
Instructions:
  • Preheat the oven to 325°F and generously coat a 13x9-inch (3-quart) baking dish with cooking spray.
  • Place the cereal in a food processor and pulse until finely crushed. In a medium bowl, combine the crushed cereal and brown sugar using a fork. Mix in the melted butter until fully incorporated. Press the cereal mixture evenly into the bottom of the pan. Bake for 14 to 18 minutes until set. Allow to cool for 10 minutes before serving.
  • In a medium bowl, use an electric mixer to blend cream cheese, granulated sugar, and lemon peel until smooth. Mix in eggs one at a time until blended, then add lemon juice. Gently fold in blueberries. Evenly spread the filling over the cooled crust.
  • Bake for 18 to 24 minutes until filling is firm. Allow to cool for 30 minutes on a rack, then refrigerate for about 2 hours until completely chilled. Cut into 6 rows by 4 rows. Just before serving, dust bars with powdered sugar.
