Elevated boiled egg and wholemeal toast with asparagus soldiers for a nutritious and delicious twist on a classic.
Ingredients:
  • 1 large bunch of asparagus (16 spears)
  • 8 slices of higher-welfare pancetta
  • 4 large free-range eggs
  • 4 slices of wholemeal bread (50g each)
Instructions:
  • Heat a griddle pan over high heat. Trim the asparagus ends and boil in salted water. Slice pancetta, wrap around asparagus, and grill for 5 minutes. Poach eggs until runny, about 5 1/2 minutes. Toast bread on the griddle, slice into soldiers. Serve eggs in egg cups alongside asparagus. Enjoy with freshly ground black pepper.
