Elevate your boiled eggs with delicious flavored salts.
Ingredients:
  • 1 bunch asparagus, woody ends trimmed
  • 8 large free-range eggs, at room temperature
  • 8 slices fresh white bread, toasted, buttered
  • 28.80 gm table salt
  • Pinch of ground chilli
  • Pinch of ground white pepper
  • 1/2 tsp finely grated lemon rind
  • 20.00 ml finely chopped fresh chives
  • Pinch ground white pepper
Instructions:
  • Combine the salt, chili, and pepper in a small bowl to create the chili salt.
  • Mix the salt and lemon zest in a small bowl to create the lemon salt.
  • Mix the salt, chives, and pepper together in a small bowl to create the flavorful chive salt.
  • Peel the ends of each asparagus spear using a vegetable peeler. Boil them in a medium saucepan for 1-2 minutes until vibrant green and tender-crisp. Drain thoroughly.
  • In a medium saucepan, gently nestle the eggs and cover them with cold water. Bring to a boil over high heat, then lower the heat to medium and cook for 1 minute and 30 seconds for a soft-boiled egg with a just-set white and a runny yolk, or adjust the time to your preference. Retrieve the eggs using a slotted spoon.
  • Trim the toast crusts and slice into fingers. Serve the eggs promptly with toast soldiers, asparagus spears, and flavored salts.
