Delicious veggie stir-fry with carrots, green beans, and bok choy, ready in 30 minutes.
Ingredients:
  • 1 teaspoon peanut oil
  • 3 tablespoons minced shallots
  • 2 medium carrots, sliced diagonally
  • 1 cup fresh green beans, cut into 1 inch pieces
  • 1 cup chopped bok choy
  • 0.33333298563957 cup low sodium, low fat vegetable broth
  • 1 tablespoon light soy sauce
Instructions:
  • In a sizzling wok, stir-fry shallots for 3 minutes, then add carrots and stir-fry for another 3 minutes. Toss in green beans and cook for 2 minutes, followed by bok choy for an additional 2 minutes. Pour in broth and let it simmer for 2 minutes. Finish by stirring in soy sauce before serving.
