Vibrant sautéed bok choy with carrots, beets, and a hint of cardamom for a colorful and flavorful side dish.
Ingredients:
  • 1 tablespoon butter
  • 1 small beet, peeled and thinly sliced
  • 3 ounces carrots, peeled and thinly sliced
  • 3.5 ounces daikon radishes, thinly sliced
  • 2 crimini mushrooms, thinly sliced
  • 3.5 ounces bok choy
  • 0.25 teaspoon ground cardamom
Instructions:
  • In a skillet over medium-high heat, melt butter and saute beet, carrots, daikon radishes, and mushrooms until slightly tender, about 5 minutes. Cover.
  • Separate bok choy into halves. Chop the bottom half and slice the leaves into ribbons.
  • Combine chopped bok choy with beet mixture and cook until bok choy is tender, around 5 minutes. Stir in cardamom and bok choy leaves and cook for an additional minute.
