Cheesy tomato bolognese muffins - a flavorful, satisfying meal in a convenient muffin form.
Ingredients:
  • 113.75 gm extra light olive oil
  • 1 small brown onion, finely chopped
  • 2 tsp fresh thyme leaves
  • 200g lean beef mince
  • 22.20 gm tomato paste
  • 125g cherry tomatoes, quartered
  • 41.60 gm tomato sauce
  • 300.00 gm self-raising flour, sifted
  • 187.50 ml finely grated parmesan
  • 128.75 gm milk
  • 2 eggs, lightly beaten
  • 20.00 ml finely grated parmesan, extra
Instructions:
  • Heat 2 teaspoons of oil in a medium frying pan over medium heat. Sauté onion, garlic, and thyme for 3 to 4 minutes until onion softens. Add the mince and cook for 5 to 6 minutes, breaking it up with a wooden spoon, until browned.
  • Stir in tomato paste and cherry tomatoes, cook and stir for 1 minute. Mix in tomato sauce and bring to a simmer. Simmer for 3 to 5 minutes until tomatoes soften. Remove from heat and let cool completely.
  • Preheat your oven to 180°C/160°C fan-forced and grease a 12-hole, 13-cup capacity muffin pan. In a bowl, mix flour and Parmesan, then create a well in the center. Whisk milk, egg, and remaining oil in a jug. Pour the egg mixture and tomato mixture into the well and gently combine until just mixed.
  • Divide the mixture among the prepared molds. Top with additional Parmesan. Bake for 15-20 minutes until golden and slightly firm. Let it rest in the pan for 5 minutes before serving warm.
