Savory meaty Bolognese sauce packed with beef, pork, bacon, veggies, herbs, wine, and tomatoes.
Ingredients:
  • 1 large onion, minced
  • 4 slices bacon, cut into 1/2 inch pieces
  • 1 clove garlic, minced
  • 1 pound lean ground beef
  • 0.5 pound ground pork
  • 1 (28 ounce) can Italian plum tomatoes
  • 0.5 pound fresh mushrooms, sliced
  • 6 ounces tomato sauce
  • 2 carrots, shredded
  • 1 stalk celery, chopped
  • 0.5 cup dry white wine
  • 0.5 cup chicken stock
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • salt and pepper to taste
  • 1 pound pasta
Instructions:
  • Heat oil in a large skillet over medium heat. Sauté onion, bacon, and garlic until bacon is crispy and browned, approximately 10 minutes. Transfer the bacon mixture to a paper towel-lined plate using a slotted spoon to drain excess oil; set aside.
  • Heat a large skillet over medium-high heat. Brown and crumble ground beef and pork in the skillet until cooked through, about 5-7 minutes. Discard any excess grease.
  • Combine the bacon mixture, tomatoes, mushrooms, tomato sauce, carrots, celery, wine, stock, basil, oregano, salt, and pepper with the meat mixture. Bring to a boil, then cover, reduce heat, and simmer for 1 hour, stirring occasionally.
  • While eagerly anticipating the burst of bubbles, prepare a generous pot of gently salted water. Introduce the pasta and let it dance in the lively water until perfectly chewy, about 8 to 10 minutes; then bid farewell to the water.
  • Drizzle the sauce over piping hot pasta.
