Bolognese sauce

Prepare this make-ahead bolognese base for quick weeknight meals.
Ingredients:
  • 18.20 gm olive oil
  • 1 large brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 large carrot, peeled, grated
  • 2 celery stalks, thinly sliced
  • 800g beef mince
  • 100g button mushrooms, thinly sliced
  • 500ml passata
  • 420g can Tomato Soup
  • 255.00 gm beef stock
  • 187.50 ml shredded fresh basil leaves
Instructions:
  • In a large saucepan over medium heat, warm up the oil. Add in the onion, garlic, carrot, and celery. Sauté for 5 minutes until the onion softens. Then add the mince and stir with a wooden spoon for 10 minutes until it browns.
  • Combine mushrooms, sauce, soup, and stock in a pot and bring to a boil. Lower the heat and simmer covered for 20 minutes until slightly thickened. Uncover and continue simmering for 10-15 minutes until thickened. Stir in fresh basil and cool before refrigerating.
