Bolognese Zucchini Noodles

Indulge in a delicious Zucchini Bolognese with low-carb spiralized noodles.
Ingredients:
  • 1 tablespoon olive oil
  • 1 (8 ounce) package button mushrooms, diced
  • 1 medium bell pepper, diced
  • 1 medium red onion, diced
  • 1 medium carrot, diced
  • 1 pound ground beef
  • 10 cherry tomatoes
  • 2 cups vodka marinara sauce
  • 16 ounces zucchini noodles
  • 1 cup baby spinach
  • salt and ground black pepper to taste
  • 1 teaspoon chopped fresh oregano, or to taste
  • 1 teaspoon chopped fresh basil, or to taste
  • 1 tablespoon grated Parmesan cheese, or to taste
Instructions:
  • In a large pan over medium heat, sizzle olive oil. Toss in mushrooms, bell pepper, onion, and carrot; saute until golden, about 5-7 minutes. Stir in garlic and cook until aromatic, around 1 minute. Add ground beef and saute until fully cooked and crumbled, 5 to 7 minutes.
  • Cut the cherry tomatoes in half and mix them with the meat. Pour in the vodka sauce and lower the heat. Add the zucchini noodles, baby spinach, salt, and pepper. Stir and cook until the spinach wilts, the zucchini is tender, and the sauce is heated through, which takes about 5 minutes. Finally, sprinkle in the oregano and basil.
  • Garnish with a generous amount of Parmesan before serving.
