Mango puree enhances these exotic cocktails.
Ingredients:
  • Juice of 1 lemon
  • 110g caster sugar
  • 1 mango or 2 thawed frozen mango cheeks
  • 750ml bottle chilled sparkling wine
Instructions:
  • Prepare the champagne flutes by rimming them with lemon juice and caster sugar. Fill each flute with mango puree, then top off with sparkling wine using a ratio of one-third puree to two-thirds wine. Serve promptly.
