Indian-inspired masala omelette: A flavorful, protein-packed dish perfect for any meal, not just breakfast. Easy to make and versatile with customizable ingredients.
Ingredients:
  • ½ a red onion
  • 2 small vine tomatoes
  • ½ a bunch of fresh coriander
  • 1 green chilli
  • 4 large free-range eggs
  • ½ teaspoon ground turmeric
  • ½ teaspoon garam masala
  • ½ teaspoon ground cumin
  • 50g baby spinach leaves
  • ½ a lemon
  • 2 knobs of butter
Instructions:
  • Prepare the ingredients: - Peel and finely chop the onion. - Halve the tomatoes, scoop out and discard the seeds, then finely chop the flesh. - Finely chop the coriander stalks and leaves. - Halve the chili, deseed, and finely slice. - Whisk the eggs until well combined, then season generously. Add in the onion, tomatoes, coriander, chili, turmeric, garam masala, and cumin. - Put the spinach leaves in a bowl, squeeze a bit of lemon over them, toss, and set aside. Cook the omelette: - Melt half of the butter in a non-stick frying pan over medium heat. - Ladle in half of the omelette mixture and swirl the eggs around for 2 minutes, pushing them towards the center of the pan. - Tilt the pan to ensure even cooking. Let it set for a minute, then transfer the omelette to a serving plate. - Top with half of the dressed spinach, fold the omelette in half, and serve immediately. - Repeat the process with the remaining butter, omelette mixture, and spinach, and enjoy!
