Curry butter brushed chicken baked with rice, seasonings, and dried fruit.
Ingredients:
  • 1 cup uncooked long-grain white rice
  • 6 ounces diced dried mixed fruit
  • 0.5 cup chopped onion
  • 1.5 teaspoons sugar
  • 1 teaspoon salt
  • 2 cups water
  • 1 (3 pound) chicken, cut into pieces
  • 2 tablespoons butter, melted
  • 4 teaspoons curry powder, divided
  • 0.5 teaspoon paprika
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Combine rice, fruit, onion, sugar, and salt in a 9x13 inch baking pan. Pour in water. Arrange chicken parts over the rice mixture. In a small bowl, combine butter, curry powder, and paprika. Brush over chicken. Cover pan tightly with foil before baking.
  • Cook in the preheated oven for 1 hour or until chicken juices run clear and rice is tender.
