Authentic and easy vegan Bombay potatoes - a simple, tasty Indian side dish that is family-friendly.
Ingredients:
  • 4 potatoes, peeled and cubed
  • 3 tablespoons vegetable oil
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper, or to taste
  • 0.5 teaspoon salt, or to taste
  • 3 tablespoons minced onion
Instructions:
  • In a saucepan, simmer cubed potatoes in water with a lid until just tender, for about 5 to 10 minutes. Drain and set aside.
  • In a large skillet over medium heat, warm oil until shimmering. Add mustard seeds and cumin seeds, cooking until they begin to pop. Stir in turmeric, coriander, cayenne pepper, and salt, cooking until fragrant for about a minute. Be vigilant to prevent burning. Add onion and cook until softened, about 2 to 3 minutes.
  • Toss drained potatoes in skillet over medium-high heat until well coated with spices. Adjust salt to taste and serve hot.
