Irish whiskey cakes: moist loaves infused with butter, brown sugar, and a kick of Irish whiskey. Adults only!
Ingredients:
  • cooking spray
  • 1 (18.5 ounce) package yellow cake mix
  • 2 (3.9 ounce) packages instant vanilla pudding mix
  • 1 cup chopped walnuts, divided
  • 1 cup Irish whiskey, divided
  • 0.5 cup milk
  • 0.5 cup vegetable oil
  • 4 large eggs
  • 0.5 cup butter
  • 1 cup brown sugar
  • 1 teaspoon water
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously grease six mini loaf pans with cooking spray.
  • In a large bowl, mix together the cake mix, pudding mix, and 1/2 cup of walnuts.
  • In a separate bowl, combine 1/2 cup Irish whiskey, milk, and oil, whisk together. Add eggs and whisk until combined. Pour over cake mixture, stir until blended, then divide batter among loaf pans.
  • Bake until a toothpick inserted in the center comes out clean, approximately 20 minutes. Cool for 5 minutes before serving.
  • Once the loaves have cooled, melt butter in a saucepan on medium heat. Stir in brown sugar, 1/2 cup walnuts, 1 tablespoon of whiskey, and water. Whisk constantly on medium heat until smooth for 3 to 5 minutes. Remove from heat and whisk in the rest of the whiskey.
  • Unmold the cakes onto a wire rack set over a baking sheet. Prick the tops with a toothpick. Drizzle cakes with whiskey topping and let them absorb it as they cool.
