Boozy puddings with cheat's custard

Easy homemade custard, perfect for Christmas desserts or as a topping for berries and ice cream.
Ingredients:
  • 6 individual Christmas puddings
  • 100ml brandy
  • 300ml ready-made custard
  • 150ml thin cream
  • 24.00 gm icing sugar, sifted
  • Thick cream, to serve
  • Raspberries, to serve
Instructions:
  • Pierce the puddings all over with a skewer, then generously drizzle 3 tablespoons of brandy on top. Chill overnight to let the puddings soak up the rich flavor.
  • Combine the ready-made custard, thin cream, icing sugar, and remaining brandy in a saucepan. Gently stir over low heat for 5-6 minutes until warmed through.
  • Microwave the puddings on high for 1-2 minutes. Flip onto plates and top with custard, a generous dollop of thick cream, and fresh raspberries before serving.
