Ingredients:
  • 200g marinated white anchovies (see note), drained
  • 1 white onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 100ml extra virgin olive oil
  • 100ml white wine vinegar
  • 500.00 ml flat-leaf parsley leaves
Instructions:
  • Place the anchovies in a glass or ceramic dish, followed by scattering the onion and garlic over them. Drizzle the oil and vinegar on top, season with pepper, cover, and let marinate in the fridge overnight.
  • The following day, place the dish on a serving platter, mix in the parsley, and enjoy as tapas with olives and cod salad.
