Create delicious marinated anchovies, known as boquerones, for your tapas with this authentic recipe!
Ingredients:
  • 24 fresh anchovies*
  • 250ml (1 cup) white wine vinegar
  • 2 tsp chopped fresh oregano
  • 1 bay leaf
  • 4.80 gm sea salt
  • 125ml (1/2 cup) Spanish extra virgin olive oil
  • 3 garlic cloves, chopped
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Prepare the anchovies by removing the heads and spines. Place them in a bowl and combine with white wine vinegar, oregano, bay leaf, and salt. Cover the bowl and refrigerate for 24 hours.
  • Thoroughly drain the anchovies and arrange them in a beautiful serving dish.
  • Mix together the flavorful olive oil, garlic, and parsley, then drizzle the delicious mixture over the anchovies before serving.
