Ingredients:
  • 1 lemon, rind finely grated
  • 42.00 gm fresh lemon juice
  • 36.40 gm olive oil
  • 1 tsp dried oregano
  • 4 veal T-bone steaks
  • Salt & freshly ground pepper
  • Steamed flat beans, to serve
  • 3 slices Traditional Italian Pane Di Casa bread (Italian crusty bread)
  • 3 large tomatoes, very finely chopped
  • 2 anchovy fillets, finely chopped
  • 20.00 ml red wine vinegar
  • 18.20 gm extra virgin olive oil
Instructions:
  • Combine minced garlic, lemon zest, lemon juice, olive oil, and oregano in a bowl. Place the steaks in a glass dish, then generously coat them with the marinade mixture. Cover and refrigerate for 1 hour to let the flavors marinate throughout the meat.
  • Preheat the oven to 200°C. Bake the bread on a tray for 12 minutes until crispy. Let it cool, then pulse it in a food processor until you have pea-sized crumbs. Transfer the breadcrumbs to a bowl and mix in the tomatoes, anchovies, salt, pepper, red wine vinegar, and olive oil to make the salsa.
  • Preheat a skillet over medium-high heat. Remove the garlic mixture from the steaks, then pat them dry with paper towel. Season with salt and pepper. Sear for 3 minutes on each side. Rest the steaks covered with foil for 3 minutes. Top with salsa and serve with beans.
