Italian-Style Broccoli Rabe

Marinated broccoli rabe sautéed in a flavorful garlic, anchovy, and olive oil paste, topped with toasted pine nuts - a delicious Italian side dish.
Ingredients:
  • 0.5 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon anchovy paste
  • 3 bunches broccoli rabe, trimmed
  • 1 teaspoon crushed red pepper
  • 0.5 cup pine nuts
  • 1 wedge lemon
Instructions:
  • In a small food processor bowl, create a flavorful paste by blending 1/2 cup of olive oil with garlic, anchovy paste, and salt.
  • Prep the broccoli rabe by removing the leaves and discarding the bottom 1/4 of the stalks. Cut the remaining stalks into pieces.
  • Prepare an ice bath in a large bowl. Blanch broccoli rabe in lightly salted boiling water for 1 minute. Shock in the ice bath to halt cooking. Drain and wring out excess liquid in cheesecloth over a sink. Marinate in anchovy paste and crushed red peppers in a resealable bag for 30 minutes.
  • Toast pine nuts in a skillet over medium heat, stirring often until golden brown and fragrant, for about 2 minutes. Set aside. Lower heat to medium-low, add 1 teaspoon olive oil to the skillet, then cook broccoli rabe until tender and lightly browned, approximately 10 minutes.
  • Plate the dish, sprinkle it with pine nuts, and generously drizzle with fresh lemon juice.
