Savor the bold, rustic Italian taste in this hearty chicken dish.
Ingredients:
  • 2 sticks celery, thinly sliced
  • 100g pancetta or bacon, chopped
  • 650.00 gm cooked Basic tomato sauce (see related recipe)
  • 125.00 gm dry white wine or Massel chicken style liquid stock
  • 12 chicken drumsticks
  • 1 lemon, cut into wedges
  • 187.50 ml black or green olives
  • 82.50 ml flat-leaf parsley leaves, roughly chopped
Instructions:
  • Preheat oven to 200°C. In a large saucepan over medium heat, heat oil. Add celery and pancetta, cook for 3 minutes until celery is tender while stirring often. Then stir in tomato sauce and wine or stock, bringing to a boil.
  • Arrange chicken evenly in a 6-cup ovenproof dish. Cover with hot sauce. Nestle lemon wedges and olives into the sauce. Bake without cover for 30-40 minutes until fully cooked. Finish with a sprinkle of parsley before serving.
