Italian-style Chicken Cacciatore: A comforting stew with browned chicken, garlic, tomatoes, mushrooms, and herbs. Perfect for warming up on a winter night and impressing guests.
Ingredients:
  • 3- to 3 1/2-lb cut-up whole chicken
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/4 cup vegetable oil
  • 1 medium green bell pepper
  • 2 medium onions
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup sliced fresh mushrooms (3 oz)
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 2 cloves garlic, finely chopped
  • Grated Parmesan cheese, if desired
Instructions:
  • Dredge chicken in flour. Heat oil in a 12-inch skillet over medium-high heat. Cook chicken for 15 to 20 minutes, or until golden brown on all sides. Drain excess oil.
  • Cut the bell pepper and onions in half crosswise, then slice each half into quarters.
  • Combine bell pepper, onions, and all remaining ingredients (except cheese) with the chicken in a skillet. Bring to a boil, then lower the heat, cover, and simmer for 30 to 40 minutes until the chicken's juices run clear when the thickest part is cut (at least 165°F). Serve with cheese on top.
