Elevate classic cacciatore with capers, pepperoni, and olives for a flavorful twist. Perfect for any occasion, and easily customizable.
Ingredients:
  • 1 (4 pound) chicken, cut into pieces
  • salt and pepper to taste
  • 0.25 cup olive oil
  • 2 onions, thinly sliced
  • 0.5 cup fresh sliced mushrooms
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup white wine
  • 0.25 cup pitted green olives
  • 0.25 cup black olives
  • 2 tablespoons capers
  • 8 ounces pepperoni sausage, sliced
Instructions:
  • In a large skillet over medium heat, heat oil until shimmering. Season chicken generously with salt and pepper, then sear in the hot oil until golden brown. Transfer chicken to a plate and set aside.
  • In the same skillet, cook onions and mushrooms until they become translucent. Add back the chicken, then mix in the tomatoes, soup, and wine. Once the liquids start to simmer, stir in the green olives, black olives, capers, and pepperoni. Cover the skillet and allow to simmer for 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C. Pour the skillet mixture into a 9x13 inch baking dish and bake for 15 minutes until the chicken is tender and juices run clear.
