Butter-browned beef short ribs braised with red wine and beef broth, served with steamed broccoli and rice.
Ingredients:
  • 1 tablespoon butter
  • 3 slices bacon, chopped
  • 2 pounds beef short ribs, cut into 2 inch pieces
  • 1.5 teaspoons salt
  • 0.125 teaspoon ground black pepper
  • 1 cup beef broth
  • 2 tablespoons fresh lemon juice
  • 0.25 cup red wine
  • 0.125 teaspoon dried oregano, crushed
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • In a heavy saucepan over medium heat, melt butter and brown bacon and beef short ribs for about 10 minutes, stirring constantly.
  • Place the ribs and bacon in a 2 quart baking dish. Season generously with salt and pepper. Add the beef broth, lemon juice, and red wine. Sprinkle in the oregano, then mix everything together thoroughly before covering the dish.
  • Roast in the oven until the meat is tender and falls off the bone easily. Remove any excess fat before serving.
