Spicy beef and rice skillet with veggies simmered in tomato broth. Serve with tortillas, sour cream, and salsa.
Ingredients:
1poundlean ground beef
1onion, diced
1green bell pepper, diced
1 (14 ounce) canbeef broth
2cups fresh corn kernels
1 (10 ounce) candiced tomatoes with green chile peppers
1 (15 ounce) cantomato sauce
0.5 cupsalsa
0.5 teaspoonchili powder
0.5 teaspoonpaprika
1teaspoonmincedcilantro
1.5 cups uncookedwhite rice
1cupshreddedCheddar cheese
Instructions:
Begin by browning the ground beef in a medium stock pot over medium heat. Once browned, drain any excess fat and introduce the onion and green pepper to the mix. Continue cooking until the onion reaches a tender consistency.
Combine beef broth, corn, tomatoes with green chile peppers, and tomato sauce in a pot. Add salsa, chili powder, paprika, garlic powder, salt, pepper, and cilantro. Mix well. Bring to a boil, then stir in the rice.
Simmer until rice is tender, approximately 25 minutes.
Finish by generously showering the divine Cheddar cheese over the mixture and let it cook for 10 minutes, or until the cheese is beautifully melted.
